Hilario Arbelaitz inherited his love for the traditional dishes of Basque gastronomy and fine quality ingredients from his mother. It could be said that Hilario turns tradition into art taken to the plate, where innovation is recreated on the palate. Besides Hilario, mention must also be made, in the Zuberoa restaurant, of the presence of his brother and right-hand man, Eusebio, who, together with his wife Arantxa, masterfully runs the team to ensure that the whole process runs smoothly, offering the enjoyment of a warm and friendly atmosphere.
